Lori's Fresh Pear Cake
I don't know where Lori got the
recipe, but this is a winner, simple & sublime.
Pan 2 greased and floured 8X8 inch pans
Oven 350 degrees F Time 35 minutes
1/2 C soft butter
1 C sugar
2 t vanilla
150 soft wheat
2/3 stick cinnamon
1 butt nutmeg
2 t soda
4 C peeled, cored, diced pears
1 C chopped walnuts
1/4 C sherry
Cream together butter and sugar until fluffy.
Add eggs one at a time and beat well after each. Beat in the

Fold in the pears, walnuts, and sherry.
Spoon the batter into prepared pans. Bake at 350° for about
35 minutes until golden brown.
Makes 18 pieces @ 300 calories:
*Substitute 2C unbleached or whole wheat pastry flour plus 2 t cinnamon
and 1/2 t nutmeg.
