Lori's Fresh Pear Cake

I don't know where Lori got the recipe, but this is a winner, simple & sublime.

Pan 2 greased and floured 8X8 inch pans        Oven 350 degrees F        Time 35 minutes

1/2 C soft butter
1 C sugar

2 eggs
2 t vanilla

Mill together:*
  150 soft wheat
  2/3 stick cinnamon
  1 butt nutmeg
2 t soda
dash salt

4 C peeled, cored, diced pears
1 C chopped walnuts
1/4 C sherry   

Cream together butter and sugar until fluffy.

Add eggs one at a time and beat well after each.  Beat in the vanilla.  

Stir in sifted dry ingredients and mix well.

Fold in the pears, walnuts, and sherry.

Spoon the batter into prepared pans.  Bake at 350° for about 35 minutes until golden brown.

Makes 18 pieces @  300 calories:
         32% fat        78% carbos            6% protein

*Substitute 2C unbleached or whole wheat pastry flour plus 2 t cinnamon and 1/2 t nutmeg.
