Garbanzos with Potatoes and
Peanut "Curry"
I once found fresh garbanzos in the
pod at the farmers market, and combined them with marvelous little
fingerling potatoes--the result was sublime. Ordinary garbanzos
and good yellow potatoes are just fine too, and lots easier to find!
1 onion, chopped
olive oil
1/2 t cinnamon
1/8 t cloves
1/4 t allspice
black pepper
2 C chopped yellow potatoes (like
yellow finns or yukon golds)
1 C summer
vegetable stock
1/2 C water
1/2 t salt
2 C cooked garbanzos
2 T peanut butter
1 T molasses
Saute the onion in the oil until soft.
Stir in the spices and potatoes, and saute together briefly.
Add the stock, water and salt and simmer until the potatoes are tender.
Add the garbanzos, peanut butter, and molasses and heat through.
Correct seasonings to taste.
