Norman's Cookies

Dad came up with these soft, spicy, fruity cookies

Sheets  greased         Oven 375 degrees F        Time 12-15 minutes

1/4 cup sugar
1/2 cup walnuts
1/2 cup raisins or currants
1/2 cup dried apricots

1 cup butter
3/4 cup sugar

3/4 cup molasses
2 eggs
1 teaspoon vanilla

Mill together:
  525 grams soft wheat
  1 cinnamon stick
  1 tablespoon cardamom pods
  1-2 nutmeg butts
 
OR substitute

  3 1/2 cups unbleached or whole wheat pastry flour
        2 teaspoons cinnamon
        1 1/2s teaspoon cardamom
        1 teaspoon nutmeg

1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
   
In a food processor or blender, mince the fruits, nuts and sugar together (the sugar keeps the rest separate bits instead of making one glompy mess).  Reserve.

Cream butter and sugar until light and fluffy.  Beat in the molasses,  eggs and vanilla until smooth and light.  

Whisk dry ingredients together, then stir into wet;  add the nut/ fruit mixture and stir again just until mixed.  

Drop by teaspoonsful onto lightly greased sheets.  Bake 12-15 minutes until just firm on top.  They should be slightly crunchy outside and soft inside.
