Garlic Potatoes
Powerfully garlic and good!
2 t olive oil
3-4 cloves garlic or more to taste
salt
pepper
8 oz potatoes*, unpeeled, washed, and sliced to 1/4" thick
I love to use tiny little potatoes called Ruby Crescent
Fingerlings. Tiny new or creamer potatoes, or the smallest yellow
finns or yukon golds you can find, would also be
good.
In a pyrex dish, put the garlic through a press into the olive
oil. Stir in a bit of fresh ground pepper and a sprinkle of
salt. Heat together in microwave for 1-2 minutes.
Stir the garlic-oil mixture. Add the potatoes and toss in the
oil. Microwave again until the potatoes are soft, stopping to
stir the mixture every 2 minutes.
(Total time depends on your potatoes and the microwave; in mine, it
takes about 5-7 minutes).
